As I packed the freezer with meals for postpartum, I started to give some thought to snacks. If I have heard anything from other moms about breastfeeding, it is about how HUNGRY they are and how much snacking happens! While there are a few store bought snacks I like, I wanted to make something that was deeply nourishing and filled with healthy fats rather than just sugar, but still felt like a bit of a treat.
Enter these superfood cacao coconut macaroons. They have both shredded coconut and coconut oil for hunger-satisfying fats, cacao for magnesium, antioxidants and a mood-booster, and superfoods to help support my hormones, energy and body postpartum.
2 cups finely shredded coconut (unsweetened)
1/4 cup cacao powder
1/2 cup coconut oil (melted)
1/4 cup maple syrup
1-2 tablespoons your choice of superfoods (I used Clean Treats mix I received as a gift with maca, lucuma, mesquite, pea protein, chia seeds, coconut sugar, vanilla, cinnamon & Himalayan salt, but I would also recommend a mix of maca, ashwagandha, rhodiola, flax seed or chia seed)
In a large bowl, mix the shredded coconut and cacao powder making sure the coconut is evenly coated and there are no lumps.
Add the superfoods
Add the coconut oil and maple syrup and mix well.
If the coconut oil was quite warm, allow the mixture to cool slightly but not harden (about 10 minutes).
Form into balls and place on parchment-lined baking sheet.
Set in the fridge or the freezer until hard, and store there for later!
