Maca Chocolate Truffles

These truffles are incredibly rich and perfect when that chocolate craving comes around! If you choose sugar-free chocolate, they will also be sugar-free and full of healthy fats and proteins. And if maca isn't your thing, try other adaptogens such as ashwagandha for adrenal support!

Ingredients
6-7 ounces of 70%+ dark organic chocolate
¾ cup full fat coconut milk
2 teaspoons maca powder
2 scoops Vital Proteins Collagen powder
(optional) Cacao powder or hemp seeds for coating
Directions
Heat the coconut milk in a small saucepan over medium heat.
In a heat-proof bowl, break the chocolate into pieces.
Pour the hot coconut milk over the chocolate and whisk until well-combined.
Add the maca and collagen and mix well.
Cover and place into the refrigerator for 3 hours. Place a spoon into the fridge as well to use during the next step.
Remove from the refrigerator, and using a cold spoon and your hands, form 1” balls. Place on a parchment-lined cookie sheet and place into the refrigerator for 30-60 minutes to set.
(Optional) Roll the balls in cacao powder or hemp seeds.
Store the truffles in the refrigerator, and enjoy!
