Paleo Pumpkin or Sweet Potato Waffles

My dad used to make pancakes or waffles most Sunday mornings when I was a child. I remember the kitchen seeming a mess, flour everywhere and tons of dishes to clean up. But it was a welcome departure from bowls of cereal and something special to have as a family.
So when I decided to eat less refined flour and give up gluten, I knew I wouldn’t be eating as many waffles, but then I discovered paleo waffles WITH VEGETABLES IN THEM!!! How could I say no?? And a bonus? These can be made in a blender or Magic Bullet for the quickest waffle cleanup ever!
Many of the paleo waffle recipes out there use bananas, but I like to use pumpkin or sweet potato for a little less sugar in the morning. These also make the best day-after-Thanksgiving Day recipe to use up any leftover mashed sweet potato!!

Makes 3 waffles
Ingredients
3/4 cup pumpkin puree or sweet potato puree
4 tablespoons coconut flour
1/2 teaspoon cinnamon or 1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
3 eggs
1/4 teaspoon pink salt
Instructions
Place all ingredients in a blender or Magic Bullet and blend well.
Make the waffles according to the instructions of your waffle maker. I used 1/2 cup per waffle, and set my waffle maker to setting 3 (it won’t need to be as high as used for regular waffles). Use a fork to remove from the waffle maker.
