Paleo Spiralized Sweet Potato Waffles
I usually have some version of sweet potatoes with breakfast every morning, and sometimes I just want to feel fancy! Enter the spiralized sweet potato waffle! Minimal ingredients, and easy to make, this can satisfy that waffle craving without the conventional packaged powders!
1-2 medium sweet potatoes
1 tablespoon ghee or coconut oil
1 egg, whisked
1-2 teaspoons ground cinnamon
Peel the sweet potatoes and spiralize into small noodles. You can do this during meal prep and store in the fridge until you’re ready to use.
Over medium heat, sauté the sweet potato noodles in a tablespoon of ghee or coconut oil until just soft. Add more fat if necessary.
While the noodles are cooking, whisk one egg and the cinnamon together in a small bowl and heat your waffle maker. Brush your waffle maker with ghee or coconut oil if necessary.
When the noodles are soft, add to the bowl and combine with the egg mixture.
Using tongs, place noodles on the center of the waffle maker and spread out into a thin layer. Cook according to the instructions of your waffle maker. Repeat until all waffles are done.
I recommend serving with extra protein, such as avocado + fried egg, unsweetened yogurt, or breakfast sausage, for a full and satisfying breakfast.
